Juicy Orange Carrot & Spinach Soup
Ingredients
- 11/2 cups CARROTS, peeled & shredded
- 2 cups FRESH SPINACH, roughly chopped
- 1½ cups HALF-AND-HALF
- 1½ cups CHICKEN BROTH
- ½ cup ORANGE JUICE
- 1½ cups ONION, chopped
- 4 tablespoons ALL-PURPOSE FLOUR
- 5 tablespoons BUTTER or MARGARINE
- ½ teaspoon SALT
- ¼ teaspoon BLACK PEPPER
- ¼ teaspoon GROUND NUTMEG
- 2 teaspoons ORANGE ZEST, freshly grated
Instructions
- ) In large saucepan melt butter, add onions, cook until tender about 5 minutes
- ) Stir in flour until smooth & bubbly
- ) Mix in half-and-half, chicken broth & orange juice
- ) Add salt, pepper, nutmeg & orange zest & cook for 1 minute
- ) Stir in spinach & carrots
- ) Continue cooking over low heat, stirring occasionally until soup is heated through & carrots are tender about 12 to 15 minutes
