Juicy Orange Carrot & Spinach Soup

Juicy Orange Carrot & Spinach Soup

Ingredients
  • 11/2 cups CARROTS, peeled & shredded
  • 2 cups FRESH SPINACH, roughly chopped
  • 1½ cups HALF-AND-HALF
  • 1½ cups CHICKEN BROTH
  • ½ cup ORANGE JUICE
  • 1½ cups ONION, chopped
  • 4 tablespoons ALL-PURPOSE FLOUR
  • 5 tablespoons BUTTER or MARGARINE
  • ½ teaspoon SALT
  • ¼ teaspoon BLACK PEPPER
  • ¼ teaspoon GROUND NUTMEG
  • 2 teaspoons ORANGE ZEST, freshly grated
Instructions
  1. ) In large saucepan melt butter, add onions, cook until tender about 5 minutes
  2. ) Stir in flour until smooth & bubbly
  3. ) Mix in half-and-half, chicken broth & orange juice
  4. ) Add salt, pepper, nutmeg & orange zest & cook for 1 minute
  5. ) Stir in spinach & carrots
  6. ) Continue cooking over low heat, stirring occasionally until soup is heated through & carrots are tender about 12 to 15 minutes
  7. ) 6 servings
