Sweetly Sour Carrots

Not just a glaze, but a piquant sauce.

Ingredients
  • 1 pound CARROTS, peeled and thinly sliced
  • ¼ cup +3 tablespoons CHICKEN BROTH
  • 1 tablespoon SALAD OIL
  • 1 tablespoon CORN STARCH
  • 1 small ONION cut in ¼ inch slices
  • 2 tablespoons VINEGAR
  • 2 tablespoons BROWN SUGAR SALT to taste
Instructions
  1. ) Mix sugar & cornstarch together
  2. ) Add ¼ cup chicken broth and vinegar---set aside
  3. ) Heat non stick frying pan or wok to hot heat & add oil
  4. ) Add carrots and onions, stir fry for 1 minute
  5. ) Add 3 tablespoons of chicken broth
  6. ) Cover, reduce the heat to medium
  7. ) Cook until tender, but still crisp to the bite
  8. ) Increase the heat to high and pour in the sauce that was set aside
  9. ) Stir until sauce thickens, which will be quick--salt to taste
  10. ) Serve to four lucky people
