Jasmine Coconut Rice

Light & fluffy with a mild ginger snap.

Jasmine Coconut Rice

Ingredients
  • 1 cup JASMINE or BASMATI RICE
  • 1 cup WATER ½ teaspoon SALT
  • 1 3 inch CINNAMON STICK
  • 1 can (14 oz) COCONUT MILK
  • 4 thin strips of 2 inches long of peeled FRESH GINGER
Instructions
  1. ) Put in altogether in a pot with a lid
  2. ) Bring to a boil
  3. ) Cover, reduce the heat and simmer for 15 minutes
  4. ) Uncover to rice with a tantalizing smell
  5. ) Remove the ginger and cinnamon stick
  6. ) Fluff it up with a fork and serve to 4 lucky diners
