Jasmine Coconut Rice
Ingredients
- 1 cup JASMINE or BASMATI RICE
- 1 cup WATER ½ teaspoon SALT
- 1 3 inch CINNAMON STICK
- 1 can (14 oz) COCONUT MILK
- 4 thin strips of 2 inches long of peeled FRESH GINGER
Instructions
- ) Put in altogether in a pot with a lid
- ) Bring to a boil
- ) Cover, reduce the heat and simmer for 15 minutes
- ) Uncover to rice with a tantalizing smell
- ) Remove the ginger and cinnamon stick
- ) Fluff it up with a fork and serve to 4 lucky diners
