This is more of a delicious onion dish than a rice dish.
Fancy French Onions & Rice
Ingredients
- 2 quarts BOILING WATER
- 1 teaspoon SALT
- ¼ cup LONG GRAIN RICE
- ¼ cup BUTTER & MARGARINE, melted
- 4 cups YELLOW or WHITE ONION, thinly sliced
- ½ teaspoon SALT
- ½ teaspoon PAPRIKA
- ¼ cup PARMESAN CHEESE, grated
Instructions
- ) Drop rice into rapidly boiling water with 1 teaspoon salt
- ) Boil uncovered for only 5 minutes--drain at once
- ) In a 2 qt casserole stir together butter, onions & ½ teaspoon salt
- ) Add rice & mix enough to distribute rice evenly
- ) Cover & bake at 325 degrees F for 1 hour
- ) Sprinkle with paprika & parmesan cheese
- ) Makes 8 servings
