Fancy French Onions & Rice

This is more of a delicious onion dish than a rice dish.

Ingredients
  • 2 quarts BOILING WATER
  • 1 teaspoon SALT
  • ¼ cup LONG GRAIN RICE
  • ¼ cup BUTTER & MARGARINE, melted
  • 4 cups YELLOW or WHITE ONION, thinly sliced
  • ½ teaspoon SALT
  • ½ teaspoon PAPRIKA
  • ¼ cup PARMESAN CHEESE, grated
Instructions
  1. ) Drop rice into rapidly boiling water with 1 teaspoon salt
  2. ) Boil uncovered for only 5 minutes--drain at once
  3. ) In a 2 qt casserole stir together butter, onions & ½ teaspoon salt
  4. ) Add rice & mix enough to distribute rice evenly
  5. ) Cover & bake at 325 degrees F for 1 hour
  6. ) Sprinkle with paprika & parmesan cheese
  7. ) Makes 8 servings
