Do The Mashed Potato

Serve for dinner or for breakfast with poached eggs.

Ingredients
  • 8 cups RED POTATOES, peeled & sliced
  • 2 tablespoons ALL PURPOSE FLOUR
  • 2 EGGS, lightly beaten
  • 1 cup PLAIN YOGURT
  • 1½ teaspoons SALT
  • 1½ cups COLBY CHEESE, shredded
  • 3 tablespoons of butter, melted & divided
  • ½ cup SEASONED DRY BREAD CRUMBS
  • 9 BACON STRIPS, cooked & crumbled
Instructions
  1. ) Boil potato slices until tender about 10-12 minutes. Drain & cool slightly
  2. ) In a bowl combine flour, eggs, yogurt, 1 tablespoon butter & salt
  3. ) Add potatoes & toss gently to coat
  4. ) Place half the potatoes in a 2 qt casserole dish
  5. ) Cover with half the cheese & sprinkle with half the bacon
  6. ) Add second half of potatoes & top with remaining cheese & bacon
  7. ) Toss bread crumbs with remaining 2 tablespoons of butter sprinkle on top
  8. ) Bake 50-60 hour at 350 degrees F
  9. ) 12 servings
