Do The Mashed Potato
Ingredients
- 8 cups RED POTATOES, peeled & sliced
- 2 tablespoons ALL PURPOSE FLOUR
- 2 EGGS, lightly beaten
- 1 cup PLAIN YOGURT
- 1½ teaspoons SALT
- 1½ cups COLBY CHEESE, shredded
- 3 tablespoons of butter, melted & divided
- ½ cup SEASONED DRY BREAD CRUMBS
- 9 BACON STRIPS, cooked & crumbled
Instructions
- ) Boil potato slices until tender about 10-12 minutes. Drain & cool slightly
- ) In a bowl combine flour, eggs, yogurt, 1 tablespoon butter & salt
- ) Add potatoes & toss gently to coat
- ) Place half the potatoes in a 2 qt casserole dish
- ) Cover with half the cheese & sprinkle with half the bacon
- ) Add second half of potatoes & top with remaining cheese & bacon
- ) Toss bread crumbs with remaining 2 tablespoons of butter sprinkle on top
- ) Bake 50-60 hour at 350 degrees F
- ) 12 servings
