Turkey Cheese Sauce Open Face Sandiwch
Ingredients
- 1½ cups FRESH MUSHROOMS, sliced
- 8 slices TURKEY or CHICKEN BREASTS, skinless & cooked
- ½ cup CELERY, chopped
- ½ cup YELLOW ONION, chopped
- ⅓ cup BUTTER
- 1½ cups CHICKEN BROTH
- ½ cup MILK 1 EGG, slightly beaten
- ¼ cup ALL PURPOSE FLOUR
- ½ cup MONTEREY JACK CHEESE, shredded
- ½ teaspoon DRIED OREGANO
- ½ teaspoon SMOKED PAPRIKA
- ½ teaspoon SALT
- ¼ cup PARMESAN CHEESE, shredded
- 8 slices LIGHT RYE BREAD, toasted
- 8 slices TOMATO
Instructions
- ) In a large frying pan, sauté the mushrooms, celery & onion in butter until tender
- ) Blend in flour & gradually add milk & broth
- ) Stirring constantly bring mixture to a boil & it's thickened
- ) Stir a small bit of hot mixture into the egg, then return all to the pan
- ) Stir in oregano, smoked paprika & cheese
- ) Removed from heat when cheese is melted
- ) Place toast on a baking sheet & top with a slice of turkey or chicken
- ) Spoon cheese sauce over the turkey, top with tomato & parmesan
- ) Broil for 3 or 4 minutes until cheese is melted
