Italian Tomato Cheese Salad
Ingredients
- 6 large ripe ROMA TOMATOES, sliced
- ¼ inch thick
- 8 oz MOZZARELLA CHEESE, sliced
- ¼ inch thick
- 2 medium GARLIC CLOVES, minced
- 3 tablespoons RED WINE VINEGAR
- ½ cup OLIVE OIL
- ¾ teaspoon SALT
- ⅛ teaspoon PEPPER
- ½ teaspoon DRY MUSTARD
- ½ cup GREEN ONION, finely chopped
- ½ cup BLACK OLIVES, finely chopped
- 10 to 12 FRESH BASIL LEAVES, slivered into thin strips
Instructions
- ) For Dressing: In a small bowl whisk together vinegar, garlic, salt, mustard, pepper & oil blending well
- ) Cut cheese into 1 inch squares
- ) Combine in a large bowl tomatoes, cheese, olives, green onions & basil strips
- ) Pour dressing over salad, toss gently & refrigerate to marinate for at least 1 hour before serving.
