Italian Tomato Cheese Salad

If you add bits of salami, presto it’s an antipasto salad.

Italian Tomato Cheese Salad

Ingredients
  • 6 large ripe ROMA TOMATOES, sliced
  • ¼ inch thick
  • 8 oz MOZZARELLA CHEESE, sliced
  • ¼ inch thick
  • 2 medium GARLIC CLOVES, minced
  • 3 tablespoons RED WINE VINEGAR
  • ½ cup OLIVE OIL
  • ¾ teaspoon SALT
  • ⅛ teaspoon PEPPER
  • ½ teaspoon DRY MUSTARD
  • ½ cup GREEN ONION, finely chopped
  • ½ cup BLACK OLIVES, finely chopped
  • 10 to 12 FRESH BASIL LEAVES, slivered into thin strips
Instructions
  1. ) For Dressing: In a small bowl whisk together vinegar, garlic, salt, mustard, pepper & oil blending well
  2. ) Cut cheese into 1 inch squares
  3. ) Combine in a large bowl tomatoes, cheese, olives, green onions & basil strips
  4. ) Pour dressing over salad, toss gently & refrigerate to marinate for at least 1 hour before serving.
