Feta and Pecan Pasta Salad

Unique mix of greens with pasta.

Feta and Pecan Pasta Salad

Ingredients
  • MIXED GREENS such as spinach, arugula, mustard greens, radicchio curly endive, lettuce
  • 8 oz FETA CHEESE, crumbled
  • 8 oz PASTA SHAPES--your choice
  • 1 cup PECAN HALVES
  • 6 tablespoons OLIVE OIL
  • 2 tablespoons RED WINE OR SHERRY VINEGAR SALT & PEPPER to taste
Instructions
  1. ) Cook the pasta according to package instructions
  2. ) Drain well, rinse in cold water and let cool
  3. ) Wash and dry the salad greens & put in salad bowl
  4. ) Whisk together oil, vinegar, salt and pepper
  5. ) In the center of the greens pile the pasta
  6. ) Sprinkle the crumbled Feta over the top
