Feta and Pecan Pasta Salad
Ingredients
- MIXED GREENS such as spinach, arugula, mustard greens, radicchio curly endive, lettuce
- 8 oz FETA CHEESE, crumbled
- 8 oz PASTA SHAPES--your choice
- 1 cup PECAN HALVES
- 6 tablespoons OLIVE OIL
- 2 tablespoons RED WINE OR SHERRY VINEGAR SALT & PEPPER to taste
Instructions
- ) Cook the pasta according to package instructions
- ) Drain well, rinse in cold water and let cool
- ) Wash and dry the salad greens & put in salad bowl
- ) Whisk together oil, vinegar, salt and pepper
- ) In the center of the greens pile the pasta
- ) Sprinkle the crumbled Feta over the top
