Ah So Chinese Chicken Noodle Salad
Ingredients
- 1 lb CHICKEN BREASTS, skinless, boneless & cooked
- 6 oz CHINESE EGG NOODLES
- 2 cups ROMAINE LETTUCE, torn into pieces
- 1 BELL RED PEPPER, cored & slivered into strips
- 1 cup CUCUMBER, peeled & diced
- 6 GREEN ONIONS, sliced in
- ¼ inch segments
- ⅓ cup CREAMY PEANUT BUTTER
- 1½ tablespoons RED WINE VINEGAR
- 1½ tablespoons DRY SHERRY
- 3 tablespoons SOY SAUCE
- ¼ cup WATER
- 1½ tablespoons SUGAR
Instructions
- ) Cook noodles according to package instructions & drain
- ) Slice chicken into thin strips
- ) Whisk together peanut butter, vinegar, sherry, soy sauce, water & sugar in a bowl
- ) Toss noodles and chicken with peanut butter mixture
- ) Add bell pepper, cucumber, green onions and romaine lettuce
- ) Toss to combine well
- ) Serves 6
