Viva Vidalia Onion Pie

This versatile dish is good breakfast, lunch & dinner.

Viva Vidalia Onion Pie

Ingredients
  • 2 lbs VIDALIA ONIONS, thinly sliced
  • 1 UNBAKED
  • 9 INCH DEEP DISH PIE SHELL
  • 3 EGGS, well beaten
  • 1 cup SOUR CREAM
  • 1 cup PARMESAN CHEESE, freshly grated
  • ½ cup (1 stick) BUTTER or MARGARINE
  • ½ teaspoon SALT
  • ½ teaspoon PEPPER
  • ⅛ teaspoon CAYENNE PEPPER
Instructions
  1. ) In a 10 inch skillet melt butter & sauté onions until tender crisp about 6 to 8 minutes
  2. ) In a large bowl blend together well eggs, sour cream, salt, pepper & cayenne pepper
  3. ) Fold in onions
  4. ) Spoon into pie crust
  5. ) Sprinkle with Parmesan cheese
  6. ) Bake at 400 degrees F about 25 to 30 minutes or until knife inserted in the middle comes out clean
  7. ) 6 servings
