Viva Vidalia Onion Pie
Ingredients
- 2 lbs VIDALIA ONIONS, thinly sliced
- 1 UNBAKED
- 9 INCH DEEP DISH PIE SHELL
- 3 EGGS, well beaten
- 1 cup SOUR CREAM
- 1 cup PARMESAN CHEESE, freshly grated
- ½ cup (1 stick) BUTTER or MARGARINE
- ½ teaspoon SALT
- ½ teaspoon PEPPER
- ⅛ teaspoon CAYENNE PEPPER
Instructions
- ) In a 10 inch skillet melt butter & sauté onions until tender crisp about 6 to 8 minutes
- ) In a large bowl blend together well eggs, sour cream, salt, pepper & cayenne pepper
- ) Fold in onions
- ) Spoon into pie crust
- ) Sprinkle with Parmesan cheese
- ) Bake at 400 degrees F about 25 to 30 minutes or until knife inserted in the middle comes out clean
