Spicy Chili Swiss Steak

An old favorite with some snap.

Spicy Chili Swiss Steak

Ingredients
  • 2 lbs ROUND BEEF STEAK, l inch thick
  • 4 medium YELLOW ONIONS, peeled & sliced
  • ¼ inch thick
  • ½ cup CELERY, chopped
  • 1 cup RED or GREEN PEPPER, chopped
  • 1 GARLIC CLOVE, minced
  • 6 tablespoons ALL-PURPOSE FLOUR
  • 2 teaspoons SALT
  • ¼ teaspoon BLACK PEPPER
  • 6 tablespoons OLIVE OIL
  • ¾ cup CHILI SAUCE
  • ¾ cup WATER
Instructions
  1. ) Combine flour, salt & pepper
  2. ) Pound mixture into meat with a meat mallet
  3. ) Cut into 6 portions
  4. ) Preheat skillet & add half of the oil, brown the onions lightly--set aside
  5. ) Add second half of the oil & brown the meat on both sides
  6. ) Add to the meat the celery, chili sauce, water & garlic
  7. ) Cover and simmer 1 hour
  8. ) Add the onions and pepper, continue cooking 35 minutes till meat is tender
  9. ) Makes 6 servings
