An old favorite with some snap.
Spicy Chili Swiss Steak
Ingredients
- 2 lbs ROUND BEEF STEAK, l inch thick
- 4 medium YELLOW ONIONS, peeled & sliced
- ¼ inch thick
- ½ cup CELERY, chopped
- 1 cup RED or GREEN PEPPER, chopped
- 1 GARLIC CLOVE, minced
- 6 tablespoons ALL-PURPOSE FLOUR
- 2 teaspoons SALT
- ¼ teaspoon BLACK PEPPER
- 6 tablespoons OLIVE OIL
- ¾ cup CHILI SAUCE
- ¾ cup WATER
Instructions
- ) Combine flour, salt & pepper
- ) Pound mixture into meat with a meat mallet
- ) Cut into 6 portions
- ) Preheat skillet & add half of the oil, brown the onions lightly--set aside
- ) Add second half of the oil & brown the meat on both sides
- ) Add to the meat the celery, chili sauce, water & garlic
- ) Cover and simmer 1 hour
- ) Add the onions and pepper, continue cooking 35 minutes till meat is tender
- ) Makes 6 servings
