I am always surprised how good these are.
Scandinavian Meatballs
Ingredients
- 1 lb GROUND EXTRA LEAN BEEF
- ½ lb GROUND PORK
- 1½ cups FRESH WHITE BREAD CRUMBS
- 1 cup HEAVY CREAM
- 3 tablespoons FRESH PARSLEY, finely chopped
- 2 tablespoons OLIVE OIL, divided
- 1 medium ONION, finely chopped
- 1½ teaspoon SALT
- ¼ teaspoon GROUND PEPPER
- ½ teaspoon GROUND ALL SPICE
- 1 cup BEEF BROTH
- 1 cup SOUR CREAM
- 1 tablespoon ALL-PURPOSE FLOUR
Instructions
- ) Combine crumbs & cream in small bowl & let stand 10 minutes
- ) Add 1 tablespoon olive oil into a skillet & cook onion until tender & translucent about 5 minutes
- ) Combine & mix well both the meats, bread crumb mixture, parsley, pepper, salt & allspice. Cover & refrigerate 1 hour
- ) Shape meat mixture into 1½ inch balls
- ) Add remaining 1 tablespoon olive oil to a large skillet
- ) Add meatballs & cook about 10 minutes, browning all sides & until no longer pink in the middle
- ) Remove cooked meatballs & drain on paper towels on a plate
- ) Drain the meat fat & discard leaving the browned meat bits
- ) On medium heat add broth, heat and stir to loosen meat bits
- ) Mix together well sour cream & flour
- ) Lower skillet heat & add sour cream mixture to the broth
- ) Cook 5 minutes, stirring constantly DO NOT BOIL
- ) Add meatballs & cook 5 more minutes on low
