Open Sesame Fried Fish

Ingredients
  • 2 pounds firm WHITE FISH--cod, halibut, red snapper
  • (4 fillets)
  • ¾ cup fine BREAD CRUMBS, unseasoned
  • ¼ cup FLOUR
  • 1 teaspoon SALT
  • ¼ teaspoon BLACK PEPPER
  • I EGG
  • 1 tablespoon MILK
  • 2 tablespoons BUTTER, unsalted
  • 2 tablespoons light OLIVE or CANOLA OIL
  • ¼ cup SESAME SEEDS
Instructions
  1. ) Mix the flour, salt and pepper in a bowl big enough to lightly dredge the fish fillets in the seasoned flour
  2. ) Combine the sesame seeds and bread crumbs in a shallow bowl
  3. ) In another shallow bowl, gently whisk the egg with the milk
  4. ) Dip the floured fish into the egg mixture, then roll the fish in the bread crumbs and sesame seeds, coating the fish completely
  5. ) In a large non-stick skillet heat the oil and butter over a medium temperature. When the oil and butter start to foam, add the fish and fry until golden, approximately 5 minutes per side
  6. ) Quick, easy and delicious. Serves 4.
