Open Sesame Fried Fish
Ingredients
- 2 pounds firm WHITE FISH--cod, halibut, red snapper
- (4 fillets)
- ¾ cup fine BREAD CRUMBS, unseasoned
- ¼ cup FLOUR
- 1 teaspoon SALT
- ¼ teaspoon BLACK PEPPER
- I EGG
- 1 tablespoon MILK
- 2 tablespoons BUTTER, unsalted
- 2 tablespoons light OLIVE or CANOLA OIL
- ¼ cup SESAME SEEDS
Instructions
- ) Mix the flour, salt and pepper in a bowl big enough to lightly dredge the fish fillets in the seasoned flour
- ) Combine the sesame seeds and bread crumbs in a shallow bowl
- ) In another shallow bowl, gently whisk the egg with the milk
- ) Dip the floured fish into the egg mixture, then roll the fish in the bread crumbs and sesame seeds, coating the fish completely
- ) In a large non-stick skillet heat the oil and butter over a medium temperature. When the oil and butter start to foam, add the fish and fry until golden, approximately 5 minutes per side
- ) Quick, easy and delicious. Serves 4.
