Likeable Lemon Basil Chicken Pita Pockets
Ingredients
- 3 cups CHICKEN BREASTS, skinless, cooked and diced
- 2 tablespoons CAPERS
- 3 GREEN ONIONS, finely chopped
- 4 PITA BREADS, sandwich size about 6 inches
- ¼ cup PARSLEY, finely chopped
- 1 teaspoon LEMON ZEST, grated
- ¼ cup OLIVE OIL
- 1 teaspoon DIJON MUSTARD
- ½ teaspoon SALT
- 3 tablespoons LEMON JUICE
- ¼ teaspoon BLACK PEPPER
- ¾ cup FRESH BASIL LEAVES, finely chopped
Instructions
- ) Whisk together lemon juice, lemon zest, mustard, salt and pepper
- ) Mix in basil leaves, green onions, capers and parsley
- ) Add the chicken and toss, thoroughly coating the chicken cubes
- ) Fill the pita bread pockets with filling. Serve immediately
