Easy Italian Sausage Manicotti
Ingredients
- 1 lb BULK ITALIAN SAUSAGE
- 1 28 oz can CRUSHED TOMATOES
- 1 jar GARLIC BASIL SAUCE
- 2 EGGS, beaten
- 1 cup PARMESAN CHEESE, grated
- 1 cup MOZZARELLA CHEESE, shredded
- 3 cups RICOTTA CHEESE
- 18 MANICOTTI SHELLS
- ½ teaspoon DRIED BASIL
- ½ teaspoon DRIED OREGANO
- ½ teaspoon GARLIC POWDER
- ½ teaspoon SALT
- ½ teaspoon PEPPER
- 4 tablespoons PARSLEY, finely chopped
- ½ cup BLACK OLIVES, finely chopped
Instructions
- ) In a large skillet brown the sausage until no longer pink
- ) Drain & set aside
- ) Bring the garlic basil sauce & crushed tomatoes to a boil
- ) Reduce head & simmer for 10 to 15 minutes, then add sausage
- ) In a large bowl mix until well blended eggs, ricotta cheese, parmesan cheese, basil, oregano, garlic powder, salt, pepper, parsley & olives
- ) Pour 1¼ cup sauce into TWO 13 X 9 inch baking dishes
- ) Stuff cheese mixture into UNCOOKED manicotti shells
- ) Arrange 9 shells in each dish
- ) Cover the manicotti with remaining sauce
- ) Cover & bake at 375 degrees F for 50 minutes
- ) Uncover & sprinkle with mozzarella cheese
- ) Bake another 10 minutes or until manicotti are fork tender
- ) 8 to 10 servings
