In The Sky Zucchini Strata
Ingredients
- 10 to 12 slices STALE BREAD, cubed
- 1½ cups ZUCCHINI, coarsely chopped
- ½ cup YELLOW ONION, chopped
- 2 tablespoons BUTTER
- 1 cup CHEDDAR CHEESE, shredded
- 6 EGGS
- 1 cup WHOLE MILK
- 2 cups SMALL CURD COTTAGE CHEESE
- ½ teaspoon PEPPER
- 1 teaspoon SALT
Instructions
- ) Layer ⅔ bread cubes in bottom 13 x 9 baking dish lightly sprayed with cooking oil
- ) Saute zucchini & onion in butter
- ) Layer on top of bread
- ) Cover with shredded cheese
- ) Layer with remaining bread
- ) Beat eggs with milk, stir in cottage cheese, salt & pepper
- ) Pour egg mixture over the bread
- ) Cover with foil and refrigerate for several hours or overnight
- ) Remove from refrigerator 1 hour prior to baking
- ) Bake uncovered for 50 to 60 minutes at 350 degrees F
- ) If starts to brown too quick, cover with foil
