Chocolate and cinnamon long associated with Mexican cooking add a little zest to the standard sugar cookie.
South of the Border Sugar Cookie
Ingredients
- 1 cup BUTTER or MARGARINE
- 1 cup SUGAR
- ½ cup POWDER SUGAR
- 1¾ cups ALL-PURPOSE FLOUR
- 2 tablespoons MILK
- 1 teaspoon VANILLA EXTRACT
- 1 teaspoon BAKING POWDER
- 1 teaspoon CINNAMON, divided
- 1 oz (1 square) SEMI-SWEET CHOCOLATE, grated
Instructions
- ) Beat together until fluffy butter, powder sugar, vanilla, milk & ½ teaspoon cinnamon
- ) Roll dough into 1½ inch balls & place 3 inch apart on non stick cookie sheet
- ) Flatten each cookie with a glass to 2 inches
- ) Bake at 325 degrees F for 20 minutes or until edges are golden brown. Let sit on baking sheet for 3 or 4 minutes when done
- ) While cookies are baking, mix sugar, chocolate and remaining ½ teaspoon of cinnamon in a bowl
- ) With a spatula place cookies in sugar mixture, gently coating both sides evenly
- ) Makes approximately 24 cookies
