South of the Border Sugar Cookie

Chocolate and cinnamon long associated with Mexican cooking add a little zest to the standard sugar cookie.

Ingredients
  • 1 cup BUTTER or MARGARINE
  • 1 cup SUGAR
  • ½ cup POWDER SUGAR
  • 1¾ cups ALL-PURPOSE FLOUR
  • 2 tablespoons MILK
  • 1 teaspoon VANILLA EXTRACT
  • 1 teaspoon BAKING POWDER
  • 1 teaspoon CINNAMON, divided
  • 1 oz (1 square) SEMI-SWEET CHOCOLATE, grated
Instructions
  1. ) Beat together until fluffy butter, powder sugar, vanilla, milk & ½ teaspoon cinnamon
  2. ) Roll dough into 1½ inch balls & place 3 inch apart on non stick cookie sheet
  3. ) Flatten each cookie with a glass to 2 inches
  4. ) Bake at 325 degrees F for 20 minutes or until edges are golden brown. Let sit on baking sheet for 3 or 4 minutes when done
  5. ) While cookies are baking, mix sugar, chocolate and remaining ½ teaspoon of cinnamon in a bowl
  6. ) With a spatula place cookies in sugar mixture, gently coating both sides evenly
  7. ) Makes approximately 24 cookies
