Coconutty Cupcakes
Ingredients
- 1½ (12 tablespoons) BUTTER, softened
- 3 EGGS
- 1½ CUPS ALL PURPOSE FLOUR
- 1 cup SUGAR 1½ BAKING POWDER
- ¼ teaspoon SALT
- ½ teaspoon COCONUT EXTRACT
- 1 teaspoon VANILLA
- 1 tablespoon WATER
- 1¼ cup SWEETENED FLAKED COCONUT
Instructions
- ) Beat sugar and butter until fluffy
- ) Combine flour, baking powder & salt
- ) Alternately add egg & flour mixture
- ) Beat in vanilla & coconut extracts & water
- ) Fil1 lined cupcake tin ⅔ full
- ) Bake @ 400 degree F 15 to 17 min till golden brown & tests done
- ) Frost & dip into flaked coconut. Makes 12 cupcakes
Cream Cheese Frosting
Ingredients
- 4 tablespoons BUTTER, softened
- 8 oz CREAM CHEESE, softened
- ¾ to 1 cup POWDER SUGAR
- ¼ teaspoon COCONUT EXTRACT
Instructions
- ) Beat cream cheese and butter until smooth & fluffy
- ) Beat in powder sugar & coconut extract
