Coconutty Cupcakes

Everyone loves cupcakes!

Ingredients
  • 1½ (12 tablespoons) BUTTER, softened
  • 3 EGGS
  • 1½ CUPS ALL PURPOSE FLOUR
  • 1 cup SUGAR 1½ BAKING POWDER
  • ¼ teaspoon SALT
  • ½ teaspoon COCONUT EXTRACT
  • 1 teaspoon VANILLA
  • 1 tablespoon WATER
  • 1¼ cup SWEETENED FLAKED COCONUT
Instructions
  1. ) Beat sugar and butter until fluffy
  2. ) Combine flour, baking powder & salt
  3. ) Alternately add egg & flour mixture
  4. ) Beat in vanilla & coconut extracts & water
  5. ) Fil1 lined cupcake tin ⅔ full
  6. ) Bake @ 400 degree F 15 to 17 min till golden brown & tests done
  7. ) Frost & dip into flaked coconut. Makes 12 cupcakes

Cream Cheese Frosting

Ingredients
  • 4 tablespoons BUTTER, softened
  • 8 oz CREAM CHEESE, softened
  • ¾ to 1 cup POWDER SUGAR
  • ¼ teaspoon COCONUT EXTRACT
Instructions
  1. ) Beat cream cheese and butter until smooth & fluffy
  2. ) Beat in powder sugar & coconut extract
