Cocoa Mambo Carrot Cake
Ingredients
- 2 cups ALL-PURPOSE FLOUR
- 2 cups SUGAR
- ½ cup BAKING COCOA
- 4 EGGS
- ½ cup CHOCOLATE CHIPS
- 1 teaspoon BAKING SODA
- ½ teaspoon SALT
- 1¼ cup VEGETABLE OIL
- 3 cups CARROTS, finely shredded
- FROSTING
- 8 oz CREAM CHEESE, softened
- ½ cup (1 stick) BUTTER, softened
- 3¾ cups POWDER SUGAR
- ¼ cup BAKING COCOA
- ½ cup MINI CHOCOLATE CHIPS
- 3 teaspoons VANILLA EXTRACT
Instructions
- ) In a large bowl combine flour, cocoa, sugar, baking soda & salt
- ) Add carrots, oil & eggs, beat until well blended
- ) Stir in chocolate chips
- ) Pour into greased 13 x 9 inch baking pan
- ) Bake at 350 degree F for 25 to 30 minutes or until knife inserted in middle comes out clean
- ) Cool before frosting
- ) For Frosting beat together cream cheese& butter until fluffy
- ) Beat in sugar, cocoa & vanilla until smooth
- ) Stir in mini chocolate chips
- ) 12 to 16 servings
