Cocoa Mambo Carrot Cake

What’s there not to like——chocolate, moist carrot texture and cream cheese frosting.

Ingredients
  • 2 cups ALL-PURPOSE FLOUR
  • 2 cups SUGAR
  • ½ cup BAKING COCOA
  • 4 EGGS
  • ½ cup CHOCOLATE CHIPS
  • 1 teaspoon BAKING SODA
  • ½ teaspoon SALT
  • 1¼ cup VEGETABLE OIL
  • 3 cups CARROTS, finely shredded
  • FROSTING
  • 8 oz CREAM CHEESE, softened
  • ½ cup (1 stick) BUTTER, softened
  • 3¾ cups POWDER SUGAR
  • ¼ cup BAKING COCOA
  • ½ cup MINI CHOCOLATE CHIPS
  • 3 teaspoons VANILLA EXTRACT
Instructions
  1. ) In a large bowl combine flour, cocoa, sugar, baking soda & salt
  2. ) Add carrots, oil & eggs, beat until well blended
  3. ) Stir in chocolate chips
  4. ) Pour into greased 13 x 9 inch baking pan
  5. ) Bake at 350 degree F for 25 to 30 minutes or until knife inserted in middle comes out clean
  6. ) Cool before frosting
  7. ) For Frosting beat together cream cheese& butter until fluffy
  8. ) Beat in sugar, cocoa & vanilla until smooth
  9. ) Stir in mini chocolate chips
  10. ) 12 to 16 servings
