Raising the Roof Raisin Scones

If you don’t soak your raisins ahead now, you will become a believer after these scones.

Raising the Roof Raisin Scones

Ingredients
  • 3 cups ALL-PURPOSE FLOUR
  • ½ cup SUGAR
  • ½ teaspoon SALT
  • 1 tablespoon BAKING POWDER
  • 5 tablespoons BUTTER or MARGARINE
  • 2 EGGS
  • 1¼ cups MILK
  • ½ cup WALNUTS, finely chopped
  • ½ cup raisins, soaked in hot water for 20 minutes
  • 1 EGG YOLK
  • 2 tablespoons COLD WATER
Instructions
  1. ) In a large bowl combine flour, sugar, salt & baking powder
  2. ) Using a pastry blender cut in the butter into the dry ingredients until the mixture resembles coarse crumbs
  3. ) In a separate bowl beat together eggs & milk
  4. ) Pour milk mixture into the dry ingredients, mix until just moistened
  5. ) Fold in drained raisins & walnuts
  6. ) Using a ice scoop form the scones on greased baking sheet
  7. ) Beat the egg yolk with the cold water & with a pastry brush glaze each scone with this mixture
  8. ) Bake at 350 degrees F for 20 minutes or until golden brown
  9. ) Makes approximately 12 scones
