Herbed Date Goat Cheese Muffins
Ingredients
- 2¼ cups ALL PURPOSE FLOUR
- 2½ teaspoons BAKING POWDER
- 1 teaspoonBAKING SODA
- 1 teaspoon SALT
- 3 tablespoons FRESH THYME
- 3 tablespoons FRESH OREGANO
- 2 EGGS
- 6 tablespoons BUTTER, melted
- ¾ cup WHOLE MILK
- ½ cup SOUR CREAM
- ¾ cup DATES, chopped
- 8 oz SOFT GOAT CHEESE like chevre, crumbled
- ½ cup FIRM GOAT CHEESE like landana, grated
Instructions
- ) Whisk together flour, baking powder, baking soda & salt
- ) In a second bowl whisk together herbs, milk, butter, eggs & sour cream
- ) Stir into milk & egg mixture both cheeses & dates
- ) Add milk mixture to flour mixture, gently fold till just moistened
- ) Fill 12 cup muffin tin lined with papers or coated with cooking spray
- ) Bake at 375 degrees F for 20 to 25 minutes or until test done
- ) Cool before removing from pan
