Herbed Date Goat Cheese Muffins

Herbed Date Goat Cheese Muffins

Ingredients
  • 2¼ cups ALL PURPOSE FLOUR
  • 2½ teaspoons BAKING POWDER
  • 1 teaspoonBAKING SODA
  • 1 teaspoon SALT
  • 3 tablespoons FRESH THYME
  • 3 tablespoons FRESH OREGANO
  • 2 EGGS
  • 6 tablespoons BUTTER, melted
  • ¾ cup WHOLE MILK
  • ½ cup SOUR CREAM
  • ¾ cup DATES, chopped
  • 8 oz SOFT GOAT CHEESE like chevre, crumbled
  • ½ cup FIRM GOAT CHEESE like landana, grated
Instructions
  1. ) Whisk together flour, baking powder, baking soda & salt
  2. ) In a second bowl whisk together herbs, milk, butter, eggs & sour cream
  3. ) Stir into milk & egg mixture both cheeses & dates
  4. ) Add milk mixture to flour mixture, gently fold till just moistened
  5. ) Fill 12 cup muffin tin lined with papers or coated with cooking spray
  6. ) Bake at 375 degrees F for 20 to 25 minutes or until test done
  7. ) Cool before removing from pan
