Down South Sweet Potato Muffins
Ingredients
- 1½ cups ALL-PURPOSE FLOUR
- 1 cup plus 2 tablespoons SUGAR
- 3 teaspoons BAKING POWDER
- 3 teaspoons GRATED ORANGE PEEL
- ¾ teaspoon GROUND GINGER
- ½ teaspoon NUTMEG
- ½ teaspoon CINNAMON
- 1 teaspoon BAKING SODA
- ¼ teaspoon SALT
- 2 EGGS, lightly beaten
- 1 cup PLAIN MASHED SWEET POTATO, cold
- 1 cup PECANS, chopped
- 12 WHOLE PECANS
Instructions
- ) In a bowl combine flour, 1 cup sugar, baking powder, orange peel, ginger, baking soda & nutmeg
- ) Blend sweet potatoes & eggs & pecans
- ) Stir potato mixture into flour mixture until just moistened
- ) Fill 12 greased or paper lined muffin cups ⅔ full
- ) Combine cinnamon with 2 tablespoons sugar & sprinkle on batter & top each muffin with a whole pecan
- ) Bake at 400 degrees F for 18 to 22 minutes or until toothpick comes out clean
- ) Cool 5 minutes before removing from pan to cooking racks
