Down South Sweet Potato Muffins

Great with Whipped Honey Butter.

Down South Sweet Potato Muffins

Ingredients
  • 1½ cups ALL-PURPOSE FLOUR
  • 1 cup plus 2 tablespoons SUGAR
  • 3 teaspoons BAKING POWDER
  • 3 teaspoons GRATED ORANGE PEEL
  • ¾ teaspoon GROUND GINGER
  • ½ teaspoon NUTMEG
  • ½ teaspoon CINNAMON
  • 1 teaspoon BAKING SODA
  • ¼ teaspoon SALT
  • 2 EGGS, lightly beaten
  • 1 cup PLAIN MASHED SWEET POTATO, cold
  • 1 cup PECANS, chopped
  • 12 WHOLE PECANS
Instructions
  1. ) In a bowl combine flour, 1 cup sugar, baking powder, orange peel, ginger, baking soda & nutmeg
  2. ) Blend sweet potatoes & eggs & pecans
  3. ) Stir potato mixture into flour mixture until just moistened
  4. ) Fill 12 greased or paper lined muffin cups ⅔ full
  5. ) Combine cinnamon with 2 tablespoons sugar & sprinkle on batter & top each muffin with a whole pecan
  6. ) Bake at 400 degrees F for 18 to 22 minutes or until toothpick comes out clean
  7. ) Cool 5 minutes before removing from pan to cooking racks
