Corny Buckwheat Blueberry Pancakes

The buckwheat adds a piquant zap.

Corny Buckwheat Blueberry Pancakes

Ingredients
  • ½ cup BUCKWHEAT
  • ½ cup CORN MEAL
  • ½ cup WHOLE WHEAT FLOUR
  • 2 teaspoons BAKING POWDER
  • ½ teaspoon BAKING SODA
  • ¼ teaspoon SALT
  • 1 tablespoon SUGAR
  • 1 cup BUTTERMILK
  • 2 EGGS
  • 1 cup BLUEBERRIES
  • 2 tablespoons CANOLA OIL
Instructions
  1. ) Mix all the dry ingredients together
  2. ) Beat eggs and oil together, then stir in buttermilk
  3. ) Mix wet ingredients into dry ingredients
  4. ) Mix in blueberries
  5. ) Pour batter on to a greased hot griddle
  6. ) Turn pancakes as soon as they are puffed & full of bubbles
