Corny Buckwheat Blueberry Pancakes
Ingredients
- ½ cup BUCKWHEAT
- ½ cup CORN MEAL
- ½ cup WHOLE WHEAT FLOUR
- 2 teaspoons BAKING POWDER
- ½ teaspoon BAKING SODA
- ¼ teaspoon SALT
- 1 tablespoon SUGAR
- 1 cup BUTTERMILK
- 2 EGGS
- 1 cup BLUEBERRIES
- 2 tablespoons CANOLA OIL
Instructions
- ) Mix all the dry ingredients together
- ) Beat eggs and oil together, then stir in buttermilk
- ) Mix wet ingredients into dry ingredients
- ) Mix in blueberries
- ) Pour batter on to a greased hot griddle
- ) Turn pancakes as soon as they are puffed & full of bubbles
