Cherry Cheese Cornbread With Chives

Cherry Cheese Cornbread With Chives

Ingredients
  • 2 cups YELLOW CORNMEAL
  • 2¼ cups BUTTERMILK
  • ½ cup (1 stick) BUTTER or MARGARINE, melted
  • 3 EGGS
  • 1 cup ALL-PURPOSE FLOUR
  • 2 tablespoons SUGAR
  • ½ teaspoon BAKING SODA
  • 1 teaspoon SALT
  • 2½ teaspoons BAKING POWDER
  • ½ cup FRESH CHIVES, snipped
  • 1 cup CHEDDAR CHEESE, shredded
Instructions
  1. ) In a medium bowl blend together well eggs, buttermilk & cooled butter
  2. ) In large mixing bowl add & mix well cornmeal, flour, sugar, baking soda, baking powder & salt
  3. ) Mix buttermilk & egg mixture into cornmeal mixture until just moistened
  4. ) Gently mix in cheese & chives
  5. ) Spoon into greased 13 x 9 inch metal baking pan
  6. ) Bake at 400 degree F for 20 minutes or until toothpick comes out clean from the middle
  7. ) Makes about 20 servings
