Cherry Cheese Cornbread With Chives
Ingredients
- 2 cups YELLOW CORNMEAL
- 2¼ cups BUTTERMILK
- ½ cup (1 stick) BUTTER or MARGARINE, melted
- 3 EGGS
- 1 cup ALL-PURPOSE FLOUR
- 2 tablespoons SUGAR
- ½ teaspoon BAKING SODA
- 1 teaspoon SALT
- 2½ teaspoons BAKING POWDER
- ½ cup FRESH CHIVES, snipped
- 1 cup CHEDDAR CHEESE, shredded
Instructions
- ) In a medium bowl blend together well eggs, buttermilk & cooled butter
- ) In large mixing bowl add & mix well cornmeal, flour, sugar, baking soda, baking powder & salt
- ) Mix buttermilk & egg mixture into cornmeal mixture until just moistened
- ) Gently mix in cheese & chives
- ) Spoon into greased 13 x 9 inch metal baking pan
- ) Bake at 400 degree F for 20 minutes or until toothpick comes out clean from the middle
