Far East Beef Wraps

These exotic tasting wraps fly off the plate.

Ingredients
  • 1½ lbs GROUND BEEF (95% lean)
  • ½ cup HOISIN SAUCE
  • ½ cup CREAMY PEANUT BUTTER
  • 1 medium CUCUMBER, peeled, seeded & chopped
  • ½ cup CARROT, shredded
  • ¼ cup FRESH MINT, torn
  • ¼ teaspoon SALT
  • ⅛ teaspoon PEPPER
  • 12 large LETTUCE LEAVES, Boston, iceberg or Romaine
Instructions
  1. ) Brown ground beef until no longer pink. Crumble as cooking.
  2. ) Pour off excess fat
  3. ) Stir in hoisin sauce & peanut butter. Cook until heated
  4. ) Remove from heat & add cucumber, carrot and mint. Gently toss
  5. ) Season with salt and pepper
  6. ) Evenly divide mixture among the 12 lettuce leaves
  7. ) Roll closed
  8. ) Serve with a favorite peanut sauce
